A spiral mixer is a kneading geometry: the tool is a spiral, the bowl rotates, and the dough is stretched as it is collected from wall to center. DIOSNA, a mixer manufacturer, describes that class as the bakery’s machine for wheat, mixed, and wholemeal doughs, with optional dough-temperature sensing 1. It is not a planetary mixer. Hobart: a planetary has one motor and a stationary bowl; a spiral typically uses one motor for the bowl and another for the arm 2. Sigma: the arm’s rotation plus the bowl’s rotation stretches dough fibers and helps a Gluten mesh form 3.
Calvel treats Mixing intensity as a choice with consequences 4. The spiral is one way to make that choice repeatable. Production scaling still forbids copying a catalog kilogram chart onto a bowl you have not measured.
Why it matters #
Dough temperature after the mix is a fermentation starting condition (Desired dough temperature). Hobart’s claim for spirals: the rotating bowl and spiral hook tend to keep dough cooler than a planetary knead, so yeast is less likely to race from mixer heat 2. Treat that as manufacturer positioning. Your number is still a measured Friction factor for this machine, batch, time, and speed 5.
Hobart places spirals in shops that live on artisan bread, Bagels, and pizza — dense, dough-heavy work. Planetaries stay the versatile pastry tool (whip, paddle, hook, and sometimes a hub attachment) 2. Sigma’s split is the same: spiral for bakery doughs; planetary for sponge, shortcrust, and small doughs 3.
Mechanism #
Mixing hydrates flour and organizes gluten. A spiral does that by repeatedly stretching the mass as the bowl feeds it into the arm, rather than by a hook whipping a stationary bowl. DIOSNA sells temperature sensors (infrared, or a scraper with a probe) because the mix is also a heat event 1. That heat is Heat transfer from mechanical work — the same phenomenon King Arthur packages as friction factor on a home mixer 5.
Bowl size and fill change the work. DIOSNA’s catalog runs from a tabletop 12 kg dough machine to hundreds of kilograms; those kilograms are their models 1. Do not copy them onto another brand. A small batch in a large bowl can skip; a stiff bagel dough loads the arm harder than a wet ciabatta.
Two-speed mixers (common on this class) let you blend, then develop. The baker still has to stop at a developed dough, not at a timer copied from a neighboring shop. Overmix is still Dough development gone past the peak: wet, sticky, extensible in the wrong way.

Hobart’s line that high absorption “makes bread easier to digest” is marketing. Omit it as nutrition. Water still changes dough; that lives on Hydration.
