Hydration is Water (and other liquids counted as water) as a percentage of flour weight. King Arthur Baking: look at the percentages and you know the bread's hydration at a glance — their white-bread illustration is 66%, ciabatta 73%, a French bread 65% 1. Those are formula readings, not targets to copy onto every Wheat flour.
Gallon pitchers hide that number; a scale does not. Calvel's doughs are judged by behavior as well as by the water line: the same percentage feels different on a strong flour than on a weak one 2.
At the bench, a wetter dough should spread and stretch before it tears. If it puddles immediately or cannot hold a fold, more water is not automatically the answer: flour strength, mixing, and fermentation may be the stronger levers. Use the dough's cohesion and extensibility to judge the next move, not the percentage alone 2.
Recast before you judge #
A dough with Poolish can show 48% water on the dough line and still be 65% overall once sponge water is added back 1. Hydration that ignores preferment water is a bookkeeping error. See Baker's percentage.
What to notice #
Wetter dough shows Fermentation earlier and slacks sooner; it also throws more steam in the oven. Drier dough takes longer to mix and can look tighter in the Crumb. Neither is "better." Feel: a 65% dough on bread flour should be cohesive, not soup and not rubble. If it tears instead of stretching, the problem may be flour or Gluten development, not a missing percent of water.
The teaching Country loaf (teaching formula) is written at 75% dough water relative to the flour line; starter water is a separate recast if you need true dough hydration. Adjust water because the flour asked for it, not because a blog hydration is fashionable.

When does wetter dough stop being more extensible?
Could the page distinguish water that improves extensibility from water that only makes handling slack? A reader needs a feel cue and a reminder that flour, fermentation, and mixing change the answer together.
