Bakery quality control is inspection as a craft habit. You wrote a formula in Baker's percentage. You scaled it. Now: did the dough and the loaf keep the bargain? King Arthur’s professional percentage guidance shows how shops scale without changing the bread 1. QC is noticing when the bread changed anyway.
Calvel’s technical breadmaking is the attitude: process conditions, not vibes 2. Tasting is the shared sensory method — crumb, crust, fermentation flavor — not a contest sheet. Weighing catches a scoop that drifted. Dough temperature after mix is a QC number if you claim a Desired dough temperature; missing it is a process miss, not a moral one.
Flour is specified, not “white” #
U.S. wheat-flour identity lives in 21 CFR Part 137 — legal names and permitted malt, not bakery marketing names 3. Wheat flour is the ingredient page. A mill certificate of analysis is a claim about that lot. Do not treat a blog protein percentage as 21 CFR.
What this is not #
It is not Food safety as pathogen control for canned food. It is not Production scaling (whether the batch fits the shop). It is whether the loaf that came out is the loaf the formula described. The teaching formula is Country loaf (teaching formula).
