Bench rest

Bench rest is the pause between Pre-shaping and Shaping. The piece sits on the bench, usually uncovered, until the skin that you just made can stretch again. Calvel's technical breadmaking treats that rest as part of the dividing-to-shape sequence, not as optional daydreaming ¹.

It is not Final proof. Proof is after the loaf exists. It is not bulk. Gas should already be in the dough; this rest is for Gluten extensibility so the final tightening does not rip.

What to notice #

The skin looks slightly relaxed, not wet and puddled, not a dry crust that will crack when you fold. If you shape immediately and the dough tears, you skipped this rest or the pre-shape was already too tight. If you wait until the piece has spread into a pancake and lost its skin, you waited into a second bulk on the bench — gather once more, or accept a weaker loaf.

Covering is a humidity choice, not a different method: a dry room skins faster. The teaching sequence is on Country loaf (teaching formula). After the rest, Shaping uses the skin you made at the pre-shape.
