A bagel is a boiled-then-baked wheat ring. King Arthur Baking: without a water bath just before the oven, you have a doughnut-shaped roll, not a bagel 1. The bath gelatinizes surface starch so the skin goes leathery and glossy in the heat. That is a different crust job from trapping Steam around a hearth loaf 2.
The dough is a stiff Lean dough — flour, water, salt, yeast, often a little malt — mixed until the mass thwaps the bowl and holds shape. Calvel’s technical breadmaking still applies: mix, ferment, and bake as linked conditions, not slogans 3.
Why it matters #
Chew is not toughness. King Arthur: chew tracks how much Gluten the dough can form; toughness tracks how that gluten was treated 1. A bagel that is bread-soft was usually too wet, too proofed, or too briefly boiled. A bagel that is a jawbreaker was usually over-mixed dry dough, over-boiled, or baked into a cracker.
Shop bakers cold-proof shaped rings so they can pull and boil on demand. That is Retarding as a freshness window, not a flavor superstition 1.
Mechanism #
King Arthur names five levers that cannot be isolated: Hydration, flour protein, shaping, fermentation time, and the boil 1.
- Stiff dough. Their teaching range is about 55–65% water on flour — firmer than many sandwich or hearth doughs. Low water tightens crumb and shortens keeping quality; they say even a good bagel is best within a few hours. Higher in that band is breadier, more open, and easier to mix.
- Protein. New York-style chew often uses high-gluten flour at or above about 14% protein. Bread flour around 12% (they cite their 12.7% bag) still makes a bagel, usually more tender. Those percentages are mill claims, not 21 CFR.
- Shaping tension. Rope-and-loop works the dough more and builds chew; a poke-through-the-ball is gentler. Pre-shaping a tight ball first reduces wrinkles 4.
- Fermentation. Long shaped cold proof relaxes tension and opens crumb. Bulk-then-boil-soon keeps the ring tighter. Classically yeasted; a sour culture adds tang if you want it. This is still Yeast bread unless the culture is the main leaven.
- Bath. Water plus, often, barley Malt syrup or non-diastatic malt (New York teaching), honey (Montreal teaching), salt, or molasses as a stand-in. Sugars help sheen. King Arthur notes that some bakers add lye to raise crust pH, at a lower concentration than pretzels, without specifying a concentration 1.
Boil time is a crust preset. Their test kitchen: shorter (around 45 seconds in one recipe’s frame) leaves more oven rise; longer (around 90 seconds per side) chews more inside and out 4. Handle gently. Overproofed rings deflate in the pot.
What to observe #
King Arthur’s home ovens land well from about 425–500 °F; professional bagel ovens they mention run hotter. Do not invent a shop deck temperature from that range 1.

Quality failure is not a food-safety clock. Do not invent a “safe boil time.”
