Production sequencing

Ordering mixer, bench, proofer, and oven so dough arrives as equipment and people are free — not the temperature-and-retard math of fermentation scheduling.

Production sequencing is the shop’s order of work. Fermentation scheduling chooses dough temperature, inoculation, and cold holds so bulk and proof land on time. The sequence tracks which machine is occupied when, and which dough may wait. Calvel treats breadmaking as linked operations 1. NIFTEM-Thanjavur’s bread-plant sketch is the make-up chain: mix, divide, round, intermediate proof, mould, pan, final proof, bake, depann, cool 2. Skip a rest and the next machine tears the dough; pile dough in front of a full oven and the first pieces overproof.
It is bakery Mise en place: not chopping onions, but knowing the deck will be free at 6:10.
Why it matters #
A Spiral mixer that is still kneading bagel dough cannot start ciabatta. A Deck oven with five independent chambers can bake unlike products at once — MIWE: each deck its own heat and steam; optional loader for high decks 3. Bongard: delayed-start and independent deck management 4. Independence does not create extra labor. Someone still has to load with steam already planned 5.
Production scaling asks whether the batch fits. Sequencing asks whether two legal batches can occupy mix, bench, and oven without colliding.
Mechanism #
NIFTEM’s make-up detail is the reason the order exists 2:
- Divide (scale). Uniform piece weight. Delay here, and later pieces are older and gassier.
- Round. New skin so gas stays in and the piece can be handled.
- Intermediate proof. After the divider and rounder the dough is degassed and tear-prone; a short rest (they give about 5–20 minutes in that plant description) restores extensibility for moulding.
- Mould and pan. Seam down in the tin so it does not open in proof.
- Final proof, then oven. Heat sets what the queue delivered.
BAKERpedia: dividing is the first make-up step; incoming bulk should match divider output so dough does not shrink in a backed-up hopper; prolonged hold makes dough gassier and warmer, so volumetric weights drift 6. That is a line-balance problem, not a recipe.

Bakery yield moves when dough ages in a queue: more gas, different bake-off. Sequencing and yield share a scale but answer different questions.
Do not invent proof-box humidity set-points beyond what a cited plant text states. NIFTEM’s 85% RH / 55–65 minute proof is that milk-bread line, not a universal 2.
