Method

Pages are files. Relationships use stable identifiers rather than URLs, so moving a file does not break the connections around it.

We prefer primary sources: universities, extension programs, government standards, scientific publications, professional associations, and the public sites of producers themselves. We do not invent URLs, quotations, addresses, or hours.

Incomplete pages are allowed. A sketch is labeled as a sketch. A developing article is not dressed up as finished work.

We teach observation, not just timers: what the dough, curd, jam, or wine is doing, what variables move it, and what failure looks like. Safety numbers (canning times, pathogen controls) come from authoritative processes. Workshop rules of thumb are labeled as practice, not as physics.

Atlas entries connect places to knowledge. They are not a business directory, so current hours, menus, and telephone numbers stay with the businesses themselves.
