Pre-shaping is the gathering after Dividing: each piece becomes a loose round or a short log with a skin, not yet a loaf. Calvel treats dividing, rounding, rest, and the final shape as linked bakery operations, not as one hurried squeeze 1.
It is not Shaping. The final shape needs a piece that already has a surface. It is not Bulk fermentation; gas work should already have happened in the mass. Wet dough (Hydration) wants a firmer gathering so it does not pour; stiff dough wants a gentler one so you do not tear Gluten.
What to notice #
The piece should sit, not spread into a pancake, and not fight you into a knotted ball. Flour on the bench is a tool; flour in the folds is a fault line later. If the dough shreds now, bulk went too far or the cut was rough. If it will not hold any round at all, bulk is not done — wait, then cut again, do not invent tension with your palms.
Then stop. The next move is Bench rest, not a second, tighter shape. The teaching formula that names this sequence is Country loaf (teaching formula).
