Pizza dough

A lean wheat dough stretched thin or pressed in a pan, fermented so gluten is extensible, then baked fast enough that the rim browns before the crumb dries out.

Pizza dough is bread dough given a different geometry and a hotter, shorter bake. King Arthur Baking: the usual ingredients are Wheat flour, water, salt, yeast or a culture, and often oil 1. That is still a Lean dough with a fat line small enough to tenderize, not a brioche. Calvel’s attitude holds: dough temperature, mix, and fermentation are conditions, not slogans 2.
Pizza dough is one part of the pie; sauce and cheese are separate crafts. A pan pie and a freeform thin crust share gluten physics and diverge in Heat transfer and hydration.
Why it matters #
Chew is not toughness. King Arthur: chew tracks how much Gluten the dough contains; toughness tracks how that gluten was treated after the mix 1. A home pie that is leathery was often overworked or baked too long while waiting for color. A pie that is floppy was often underbaked on the bottom, or stretched from dough that never relaxed.
Professional pizza ovens run far hotter than a home range. Their teaching point: brown the outside fast so the interior crumb stays moist — even a touch underbaked — while the underside and rim crisp 1. Hydration that works in a wood oven can stall a home stone: extra water has to leave before the crust can brown, and a long bake dries the crumb.
Mechanism #
Gluten has to be strong enough to hold a disc and extensible enough to thin without snapping back.
- Flour. King Arthur’s style map: their all-purpose (they state 11.7% protein) for a classic chewy-enough crust; bread flour (they state 12.7%) for thick pan pizza that needs to carry higher Hydration; a fine ‘00’ mill when the goal is a thin stretch with a puffy rim 3. Those protein numbers are mill bags, not 21 CFR. More protein means more gluten potential, not an automatic Neapolitan.
- Water. More water tenderizes gluten. In a modest home oven, too much water lengthens the bake and overcooks the interior before the rim colors 1. Match hydration to the oven you actually have.
- Oil. Lubricates gluten networks so they flex rather than tear 1. It is not counted as hydration in baker’s percent.
- Cold ferment. Long refrigeration stretches flavor time, reduces how puffy the disc gets (less CO₂, smaller alveoli — useful for a flat thin crust), and increases extensibility 1. That is Retarding as a stretch aid, not only a calendar trick.
- Rest while stretching. Snap-back is gluten that is still tight. King Arthur’s Baker’s Hotline: walk away about 15 minutes, longer if needed; cover so the skin does not dry. Push and press rather than yank 4. That pause is a Bench rest for a disc.
Many bakers divide and ball the dough right after mixing so each piece relaxes into a round during bulk, instead of fighting a cut from a large mass later 4.
What to observe #
Stone or steel under the pie is thermal mass: heat stored, then dumped into the underside. King Arthur: preheat a stone at least an hour, a steel at least 30 minutes; put the surface high in the oven so the top sees reflected heat 1. Broiler and convection are optional accelerators with a burn risk. Do not invent a wood-oven temperature for a home range.

A pan pizza is a different thermal object: oil and a hot pan brown the bottom while the sides support a wetter dough 3. Do not judge a Detroit pan by a Neapolitan photograph.
