Syneresis

A gel squeezing out liquid it used to hold — whey on yogurt, whey after a curd is cut, weeping from a jam — shrinkage of a network, not a new recipe.

Syneresis is a gel tightening and pushing out the liquid trapped in it. FAO’s cheese notes use the word in capital letters: after starter and rennet, fine droplets of whey appear on the coagulum, grow, join, and form a liquid envelope while the gel shrinks. That process is syneresis. Cutting the coagulum into smaller equal cubes increases the surface and increases whey expulsion 1. The craft page for the cut gel is Curd; the set is Coagulation.
The same family of event shows up wherever a network holds water: casein in Yogurt, Pectin in Jam, Gelatin in a dessert. The liquid’s name changes. The physics rhyme.
Why it matters #
In cheese, syneresis is how you make a drier paste; it is yield control, not a defect, if you wanted that moisture gone. FAO: equal cubes drain equally; rough cutting makes fines that leave in the whey and steal yield 1. On yogurt, a pool of whey on a set cup is usually a quality leak you did not ask for — unless you meant to drain toward a thicker product. In jam, liquid separating from the gel is a set that could not hold.
Mechanism #
A gel is a Protein or polysaccharide mesh plus water. When the mesh contracts — more bonds, less charge holding water, heat, acid, time, or a knife creating new surfaces — free liquid appears. FAO’s droplets on an uncut coagulum are the mild form; cutting is the strong form 1.
Ohio State, on fruit spreads: acid is required for a successful gel when the recipe says to add it 2. Too little acid and the pectin network never forms; the “weep” people notice in a jar is often a network that formed badly or was disturbed while setting. Treat that as a gel-contracting failure on the jam page, not as cheese.
Yogurt’s gel is acid-set casein. Whey on top is the network squeezing. Stirring it back in is a quality choice. It is not a second cheesemaking step unless you hang it.

Failure modes #
- Wanted a moist cheese, got a dry one. Too much heat, acid, or stirring after the cut.
- Wanted a set yogurt, got a puddle. Weak gel (milk, culture, incubation) or later temperature abuse. Quality. Yogurt is the craft example.
- Wanted a mound of jam, got syrup plus lumps. Gel contract failed. Jam / Pectin.
- Calling every leak syneresis. A broken emulsion oils off; that is fat, not whey. A canner leak is a seal.
Action: in the vat, cut when the gel is ready and cut evenly. In a yogurt cup, decide whether the whey is a defect or a drain. In jam, fix the pectin-acid-sugar-concentration contract, not the clock.
