A foam is gas held in a film. Egg white, a sauce you aerate, and bread crumb are cousins, not twins. An Emulsion holds oil in water (or the reverse). A foam holds bubbles. Meringue temperature depends on the formula, oven, and intended texture.
Egg as a legal product, then as a whisk #
U.S. standards in 21 CFR Part 160 cover dried, frozen, and liquid egg products; the same part states that no identity standard shall be promulgated for shell eggs as such 1. Cooks still whisk whites. The kitchen substance is Egg. What you can source here is the product class, not a lab name for the protein that stretches around air.
Observe: volume, gloss, and whether the foam still flows or cuts. Fat on the bowl — yolk, grease — is the usual kitchen failure; the foam stays liquid. Over-whipping turns glossy peaks grainy and weeps. Those are observations, not unsourced chemistry trivia.
Heat then sets the protein around the bubbles — Heat coagulation — or the foam collapses as Water drains. A soufflé’s doneness is a texture cue, while any safety temperature must come from the food and process involved.
Bread crumb is gas in gluten #
Gluten holds fermentation gas. Calvel’s bread is judged as crumb and crust, not as a mixer setting 2. King Arthur: early steam lets the loaf expand before the crust locks; that is how you get lofty height and open crumb on a hearth loaf 3. A tight crumb is often bulk or steam, not a missing whisk.
Look at a cut loaf: even holes, tunnels, or paste. Feel whether the walls of those holes are tender or thick. Baking the loaf is when the foam of dough becomes bread.
Action: keep fat out of egg foams; keep gas in dough by not degassing at the wrong moment. Protein is the film: Protein.
