Curd

Curd is the solid you keep. Whey is the liquid you mostly discard (or cook, or ferment into something else). After Coagulation, the gel still holds a great deal of water. Cheesemaking is moisture management with a knife and a paddle.

Why smaller curd dries the cheese

Cutting increases surface area. Syneresis — whey leaving the protein network — speeds up because there is more surface for liquid to escape 1. FAO is blunt: cut when the gel is firm enough, with a sharp tool, into even pieces. Rough cutting makes fines; fines are yield walking down the drain and a cloudy whey.

A small cube destined for a hard cheese and a large ladle of barely cut gel destined for a moist bloomy cheese are different foods from this moment, even if they started as the same Milk.

Cooking and stirring

Heat and agitation shrink the curd further. U.S. cheddar identity describes the mass being “so cut, stirred, and heated with continued stirring, as to promote and regulate the separation of whey and curd” 2. That sentence is a moisture specification written as a procedure.

Stirring keeps pieces from matting before you want them to. Cooking too fast case-hardens the outside and traps whey inside — a later sour or pasty defect looking for a place to happen.

Draining, pressing, cheddaring

Once the target moisture is close, whey is drained. Some styles are dipped into forms with almost no pressure; others are pressed. Cheddar-family makes include matting and stacking slabs so acidity and drainage continue in the pile 2. Those names are techniques, not a requirement that every cheese be cheddar.

What to observe

Look. Whey should clarify as protein is captured. Curd pieces should be similar in size. A mat that looks like chicken breast (the old cheesemaker simile) is a cheddar-path cue, not a universal doneness.

Feel. Pinch a piece: springy versus mushy. Excess moisture at this stage becomes a composition problem that Affinage cannot fully undo. CDR treats finished moisture, fat, pH, and salt as the composition you will live with 3.

Taste. Sweet whey early; more lactic as lactose is consumed. Bitter or unclean flavors here are a milk or culture problem, not a “needs more aging” hope.

Variables

Cut size, cook temperature, cook time, agitation, and how long curd sits under whey all move moisture. Milk fat and protein set how much solid you had to begin with 3. Acid at cutting changes how readily the gel weeps.
