The connective-tissue protein in meat, skin, and bone that moist heat can unwind into gelatin — why a tough cut softens in a braise and a chilled stock can stand up.

Collagen is a Protein in connective tissue — the sheaths around muscle fibers, the skin, the joint, the bone. It is not gluten, not casein, not egg white. Those jobs stay on the protein page. It is not the box of Gelatin until moist heat has hydrolyzed it into that soluble gel former.
Why it matters #
A chuck roast grilled like a tenderloin fights you. The same roast in a Braise can go fork-tender. MSU Extension: moist heat (braising, stewing) is for less-tender cuts; around 180 °F in the meat, for that cookery, collagen and connective tissue break down and the meat becomes tender 1. That 180 °F is a quality window they name, not an FSIS pathogen temperature. Safety numbers stay on the FSIS chart via the cooking-method pages.
Kentucky: economical, tough cuts are the braise’s reason for existing; doneness is fork-tender, which can take hours 2. The fork is feeling collagen that has given up.
Mechanism #
Long, wet heat converts collagen into gelatin that can leave the tissue and dissolve in the cooking liquid. Dry high heat mostly shrinks muscle proteins (Heat coagulation, Denaturation) before that conversion has time to finish, so you get squeeze and dryness. Water as the messenger is Heat transfer; the stove setting that keeps the liquid trembling is a Simmer.
In Stock, the same conversion loads the pot. N.C. Extension: stock is thicker than broth because of gelatin/collagen from bones; chilled, it often turns gelatinous 3. Illinois: longer simmer (sometimes up to 24 hours in bone-broth practice) releases more collagen and a thicker mouthfeel 4. The gel you buy as gelatin is this molecule, already extracted.

Failure modes #
- Still chewy at a safe 145 °F. Collagen is not done. Keep simmering. Do not confuse FSIS minima with tenderness.
- Dry strings. Boiled muscle, or a lean cut that never had collagen to convert.
- No gel in the fridge. Not enough connective tissue or too much water — Stock.
- Calling every protein collagen. Dough and cheese are other pages.
Action: match the cut to Braise or Roast. Judge conversion by fork and by whether yesterday’s stock slices.
