Osmosis

Water moving toward a higher concentration of dissolved sugar or salt, which is how a pickle weeps, a brine salts a cheese, and a jam kettle concentrates fruit.

Osmosis, in the kitchen, is water walking toward more dissolved Salt or Sugar. Cells leak. Brines penetrate. Kettles thicken. The pressure depends on the solutes and membranes in the system.
Pickles #
NCHFP’s pickling hub: skillful blending of spices, sugar, and vinegar with fruits and vegetables is what gives pickled products a crisp, firm texture and a pungent sweet-sour flavor 1. Vinegar is acid; sugar and salt are solutes. The cucumber weeps into the brine; the brine moves in. A flabby pickle is a texture failure — often a weak brine, a wrong variety, or heat that cooked the cell walls — not a reason to invent a home-canning time. Process only from a tested pickle formula. Preserving is the craft hub.
Cheese #
FAO lists salting as its own stage: dry salt or brine 2. Salt draws whey. A brined wheel is a salt gradient from rind inward until it equalizes. Details: Salting cheese. Taste the heel versus the core of a young brined cheese; that difference is unfinished diffusion.
Jam #
Sugar pulls water so pectin can gel, and boiling drives water off as steam. Ohio State: sugar must be in proportion with pectin and acid; it also limits microorganisms 3. Under-concentrated jam is syrup. That is Jam, not a pickle.
What to observe #
Look. Beads of whey on a curd, liquid climbing a cucumber jar, jam that sheets instead of dripping.
Taste. Surface salt is not paste salt. A pickle that tastes only of vinegar never got sugar and spice to do their part.
Water activity is the preservation reading of the same water. Do not treat a salty or sugary food as automatically shelf-stable.
