Salt

Sodium chloride used to season food, tighten gluten, slow yeast, and — in cheese — draw whey and steer microbes.
Salt is a small percentage and a large effect. It is one substance with several jobs. This page is the shared mineral. Crafts apply it.
Bread. Salt seasons crumb, strengthens Gluten, and reins in yeast. Leave it out and dough behaves like a different food. When you add it — with the flour, after an autolyse, or dissolved in Water — is a mixing choice 1. The teaching Country loaf (teaching formula) uses 2% of flour weight, a common baker’s-percentage starting point, not a moral law.
Cheese. FAO treats salting as its own stage: dry salt or brine 2. Salt flavors, continues whey expulsion, and changes which microbes thrive. CDR lists salt with moisture, fat, and pH as a composition you verify if you will age the cheese 3. Details: Salting cheese.
Preserving. Many pickles are salt-forward; traditional jam is sugar-and-acid-forward. Do not assume a salty food is a canned food. See Preserving.
Taste salt as itself. Then notice what it did to the structure — tighter dough, tighter curd, firmer pickle — rather than only whether the dish is “seasoned.”
