Miso is a salted soybean paste that starts with mold, not with cabbage brine. Codex’s regional standard for fermented soybean paste (Asia) defines a paste whose essential ingredient is soybean, made by fermenting boiled or steamed soybeans — or soybeans mixed with grains — with naturally occurring or cultivated microorganisms, mixing with salt or brine, aging until quality factors are met, then heating or otherwise treating so the packed product does not spoil 1. Basic ingredients: soybeans, salt, potable water, and Bacillus and/or Aspergillus that are not pathogenic and do not produce toxins. Optional grains include rice, barley, and wheat; yeasts and lactic bacteria are allowed as optionals 1. Mukherjee et al. summarize the same Codex identity 2.
Japanese miso as Allwood describes it is a two-stage food: first Koji (A. oryzae on a cooked substrate), then koji plus salt on a second substrate, fermented by yeasts and bacteria over a long aging 3. FDA’s A. oryzae review lists miso among the traditional foods that organism has served 4. Codex’s aging language is “a certain period of time”; the duration varies with the formula and conditions.
Mechanism you can taste #
Koji Enzymes attack soybean protein and any grain starch. Amino nitrogen is a Codex quality factor (a floor, not a kitchen assay) 1. What you notice in the finished paste: savory depth from amino acids, sweetness if rice koji dominated, a color that darkens as Maillard-type browning runs during aging. Texture is a paste, sometimes with intact bean pieces — Codex allows semi-solid and partly retained soybean shape 1.
Salt is compositional, not a garnish. It is a listed basic ingredient. Do not treat miso like sauerkraut and “cut the salt” from a tested cabbage formula; those are different foods. Salt here is the miso’s hurdle partner with water activity, not NCHFP kraut grams.
Safety is not pH 4.6 #
Allwood: correctly made fermented foods are rarely tied to outbreaks, but when they are, pathogens usually arrived from raw materials or the room — hygiene and fermentation conditions still matter. Koji and miso do not fit western fermented-food rules that require pH as the hurdle; they are non-acid foods 3. Acidity is why canners obsess over 4.6. It is not a license to water-bath an invented miso.
Codex allows heat or other means to prevent spoilage in the packed product 1. Many commercial misos are unpasteurized; that is a live-culture choice, not a home-canning process. No NCHFP miso canning process is established by these sources.
Process limits #
Home koji-incubation schedules, salt percentages, and aging times must come from a validated process. Allwood’s process discussion is validation literature, not a USDA home recipe. See Food safety.
Tempeh is a Rhizopus bean cake, not this paste. Lacto-fermentation is vegetables in brine. Miso borrows salt and time; it does not borrow kraut biology.
