Freezing

Freezing does not sterilize. It slows the chemistry and the microbes that ruin food. NCHFP treats drying as an alternative or a complement to canning and freezing 1. A frozen bean is not a canned bean: thaw it and you are back in ordinary perishable-food rules.
Get through the warm band quickly #
USDA FSIS: bacteria grow most rapidly between 40°F and 140°F, doubling in as little as 20 minutes — the “Danger Zone.” Do not leave food out of refrigeration over 2 hours (1 hour if the air is above 90°F). Keep cold food at or below 40°F 2. That is handling around the freezer, not a freezer setpoint. Freeze in portions that actually freeze, not in a deep bucket of warm leftovers.
NCHFP: meat and poultry should never be thawed at room temperature; thaw in the refrigerator, in cold water in a watertight bag, or in a microwave followed by immediate cooking 1.
Vegetables need a heat step first #
For almost all vegetables to be frozen, Blanching is required. It stops enzyme actions that would otherwise cost flavor, color, and texture in the freezer 3. Skip it and the bag still freezes; the food still ages badly. Fruits are a different pack: see Sugar pack.
What to notice #
Ice crystals inside a poorly packed bag are water that left the cells — freezer burn, a quality failure. Vegetables should look bright after a correct blanch, not olive-drab and slack. Fruit packed with sugar looks glazed; fruit packed unsweetened is still safe to freeze. NCHFP: sugar is not used as a preservative in frozen fruit, only to maintain flavor, color, and texture 1.
Storage duration and blanching time are food-specific; use the NCHFP tables. Canning is the shelf-stable heat process, so a frozen jar is not a processed one. See Preserving and Food safety.
