Fruit leather

Fruit puree dried into a flexible sheet — NCHFP treats leather as a drying product, not a canned jam.

Fruit leather is puree dried until it flexes instead of pouring. NCHFP lists fruit leathers with banana chips and jerky as foods you can dry year-round in a dehydrator 1. Water leaves; sugar and pectin remaining in the fruit help the sheet hold. That is Drying and Evaporation, not a boiling-water canner.
It is not Jam. Jam is a cooked gel that may later be canned. Leather is a dried sheet. Ohio State's jam family (jams, jellies, conserves, marmalades, fruit butters) is a different branch 2.
Dry until the center is no longer wet; tacky is not the same as raw puree. Mold is a dryness failure. Do not invent a canning time for leather. Strawberry, Apple, and Peach are typical fruits, not a complete list.
