Understand cheese
Printed from https://gourmetgastronomer.com/learn/cheese/
A sequence from milk through cultures, coagulation, curd, salt, affinage, and tasting, using canonical pages rather than a second textbook.
Work these pages in order the first time. FAO’s four stages — coagulate, drain, salt, ripen — are the spine 1. Cheese is the hub, not a step you must reread between every other page.
After the path, wander: Cheese rind from affinage; Cowgirl Creamery or Point Reyes Farmstead Cheese Company for North Bay milk. The sequence is a lesson, not a cage.
