Pathway brief

Before you begin

For

Beginner learners who want a guided route through canonical pages.

By the end

You can trace the main ideas in this sequence and choose the page that needs practice or a closer read.

Why this order

The pages move from foundations to observation and then to practice, so each step gives the next one a clear context.

Pause if

A step is unfamiliar. Open that page before moving on; this is a suggested route, not a timed course.

Open the final step

Tasting cheese

Work these pages in order the first time. FAO’s four stages — coagulate, drain, salt, ripen — provide the sequence 1. Cheese is the hub, not a step you must reread between every other page.

After the path, follow a related subject: Cheese rind from affinage; Cowgirl Creamery or Point Reyes Farmstead Cheese Company for North Bay milk; Cheddar as a named U.S. identity; Mozzarella as stretched curd; Cottage cheese as creamed fresh curd; Parmesan as a long-cured hard cheese; Swiss cheese as an eyed wheel; Whey as the liquid the vat discards; Yogurt before you cut a curd; Goat cheese as a different milk; Cultured butter as cream, not cheese. The sequence is a suggested order, not a requirement.
