Cheese cultures

Selected lactic bacteria, and sometimes molds or adjuncts, added to milk to acidify it and to set the flavor path of a cheese.

A cheese culture is a chosen population, not a sourdough Sourdough starter. Both are Fermentation tools. The habitat is different: milk instead of flour paste, usually a defined strain or blend instead of a continuously backslopped house flora.
Starter lactic acid bacteria convert lactose to lactic acid. That acid helps destablize casein, contributes to whey expulsion, and makes the vat a worse place for many competitors 1. U.S. cheddar identity still names this step in plain language: dairy ingredients are “subjected to the action of a lactic acid-producing bacterial culture” before clotting enzymes are added 2.
Starter versus adjunct versus rind flora #
- Starter. Acidification on a schedule. Mesophilic blends for many washed-curd and cheddar-family makes; thermophilic blends where the cook is hotter. The point is a predictable pH curve, not a tasting note.
- Adjuncts. Extra strains for flavor or openness (think propionic eyes in a Swiss-type make). They are not a second coagulation method.
- Surface flora. Geotrichum, Penicillium, Brevibacterium and their neighbors live on rinds. They are cultures in the biological sense; they are not the vat starter.
Molds that marble a blue cheese are inoculated or encouraged later, often by piercing so air reaches the interior. That is a make choice, not “wild cave air” as an explanation.
What to observe #
Milk that was sweet becomes quietly tart. A clean yogurt-like smell is typical of a healthy acidification. A sluggish vat — pH barely moving, curd that will not firm — is a culture, temperature, antibiotic, or phage problem, not a reason to wait overnight and hope.
Feel the set after the culture has worked: acid-only gels are brittle compared with rennet gels 1. That difference is Coagulation, not a culture brand.
Variables #
Temperature, inoculation rate, milk heat-treatment, and residual antibiotics all move the clock. Faster acid can make a drier, more brittle curd; slow acid leaves a sweeter, wetter paste that Affinage will not rescue if the style needed the opposite.
