Sanitation

Cleaning and keeping food out of the conditions that make people ill — hands, utensils, and time-and-temperature — without inventing sanitizer strengths or canning times.

Sanitation is removing dirt and microbes you can wash off, then not inviting them back with time and warmth. It is not a mood or a substitute for a labeled sanitizer procedure.

Hands, time, leftovers

USDA FSIS: leaving perishable food out lets bacteria such as Staphylococcus aureus, Salmonella, E. coli, and Campylobacter grow; the danger zone is 40–140 °F; two hours (one if above 90 °F) is the refrigeration rule; leftovers cool in shallow containers 1. Wash hands. Keep raw meat from ready-to-eat food. That clock is not dough DDT — see Temperature measurement.

Jars are a different cleanliness

NCHFP/USDA canning safety starts with selecting and washing food and using a researched process; washing does not kill botulinum spores 2. Clean jars are necessary and not sufficient. Use the process times in Canning and Food safety.

Dairy utensils can be too “clean”

FAO: dirty milking tools survive as a problem even after pasteurization talk; rinsing matters because cleaning agents and disinfectants left in cheese milk kill the lactic acid bacteria you need 3. Sterile and empty of sanitizer are both requirements. Cheese is the craft.

Drying still wants a clean dryer and food-grade storage; dry is not sterile. Preserving is the branch.

Observe: soap, rinse, visible soil gone, perishable food back in the cold. Failure: a sponge that smells, a vat that smells of bleach, a stockpot of soup at room temperature “until it cools.” Quality dirt and safety dirt are both dirt. Only one has a tested process when you can.
