Carryover cooking

Heat still moving from the hot exterior into the cooler center after food leaves the burner or oven — why you rest a roast, and why a probe reading is not the temperature on the plate.

Carryover cooking is the interior of food continuing to cook after you take it off the heat, because the outside is still hotter than the center. Heat moves inward until the gradient flattens. It is not a rest “so juices settle” as a slogan. It is Heat transfer still happening on the cutting board.

Why it matters

FSIS tells you to measure the safe temperature before removing food from the heat source, then, for steaks, chops, and roasts of beef, pork, veal, and lamb, to rest at least 3 minutes before carving 1 2. That rest is a safety-and-quality instruction on their chart, not permission to pull poultry early. The center does not “always” climb by one fixed number of degrees; size, shape, heat, and resting conditions decide the rise.

MSU, on larger beef roasts such as prime rib: rest typically at least 10 minutes so juices stay in the fibers instead of running onto the plate; keep the meat warm, not cold 3. That is a bigger piece and a longer rest than the 3-minute FSIS minimum. Follow both ideas: hit the safe temperature on the heat, then rest as the cut requires.

Mechanism

During a Roast or a hard Sauté, the surface is far hotter than the center. When the pan leaves the oven, the surface is still a heat reservoir. Energy flows toward the cool middle. FSIS, discussing microwave leftovers, says cooking continues longer in dense foods such as a whole turkey or beef roast than in breads or small vegetables and fruits 4. Same physics, different appliance: mass and density store heat.

A thin green bean has almost no gradient left when you plate it. A bone-in roast has a lot. Heat coagulation of muscle protein keeps going as that center temperature rises. Bread’s after-oven settling is a cousin on Cooling — steam leaving a loaf — not a meat-safety rest.

Braise pieces in liquid have a smaller surface-to-center gradient; carryover is quieter there. Temperature measurement is how you know where you are.
