Sugar pack

Packing fruit with sugar or syrup before freezing to protect flavor, color, and texture — sugar here is not the preservative that heat-canning uses.

A sugar pack is fruit mixed with Sugar (or covered with syrup) for the freezer. NCHFP: it is safe to freeze fruits without sugar; sugar is not used as a preservative but only to maintain flavor, color, and texture 1. That sentence is the whole mechanism. The cold does the keeping. Sugar does the quality.

Artificial sweeteners can replace sweetness. They do not furnish sugar’s beneficial effects — thickness of syrup and color protection 1. See Syrup for the canning cousin of that syrup.

This is not jam, and it is not a canned syrup pack

Jam is a pectin gel; a sugar-packed berry is still a berry. Canning fruit in syrup is a heat process plus a quality liquid 2. Freezing fruit in sugar is neither. Do not put a freezer bag through a water bath and call it canning.

What to notice

Sugar draws juice; the fruit looks glazed and sits in its own syrup. Unsweetened frozen fruit looks frostier and weeps more on thaw. Color that holds is the sugar doing its stated job; brown, dry freezer-burn patches are air, not a missing cup of sugar.

Sugar-to-fruit ratios are specific to the fruit-freezing process; use NCHFP’s directions for those numbers. A refrigerator jam and a sugar-pack are both cold storage; only one was cooked to a gel. See Freezing and Preserving.
