Fermented pickles and sauerkraut are not the same product as a vinegar-covered quick pickle 1. This path teaches that fork, then sends you to Canning so you do not treat a sour taste as a shelf-stable jar. Use Pickling salt in the crock and a tested Brine; Citric acid belongs in tested acidification processes for tomato and jam, not as an improvised acid for cucumbers.
