Barley

A cereal grain whose malted flour is the enzyme correction U.S. wheat-flour identity allows in small amounts.

Barley is a grain. In bakery use, it is usually malt rather than the base of a barley loaf.

U.S. wheat flour identity allows malted wheat, malted wheat flour, malted barley flour, or a combination, to compensate for a natural deficiency of enzymes — with malted barley flour not more than 0.75 percent 1. Whole wheat flour identity repeats the same malt permission. The mill may already have used Malt from this grain. That is enzyme correction inside Wheat flour, not a claim that barley is wheat.

Barley is not Wheat. Pearled barley in a soup is a different food from malted barley flour in a dough. Milling and malting decide which of those you bought. Malted barley with Hops is also the grain in Beer — a malt beverage, not 21 CFR 137.

Baking. A pinch of enzyme-active malt can feed fermentation and color crust; too much enzyme makes gummy crumb. The craft is Baking.

What to notice. Whole barley is a hard kernel with a crease. Malt smells sweet and grainy. If a flour spec already lists malted barley flour, you are looking at this ingredient after the maltster and the miller, not at a soup grain.
