Sparkling wine

Grape wine made fizzy by carbon dioxide from a closed fermentation — tank or bottle — as distinct from wine that was injected with gas.

Sparkling grape wine is still grape wine that became effervescent from carbon dioxide produced only by fermenting that wine in a closed container, tank, or bottle 1. The gas is a fermentation product trapped on purpose. Wine fermentation the first time made the wine; a later, closed ferment (or the same ferment finished under pressure) is what puts the mousse in the glass.

That is class 2. Class 3 is carbonated grape wine: the same grapes, fizz from carbon dioxide other than that closed secondary ferment — typically gas added to still wine 1. Do not call injected CO₂ a second fermentation. U.S. production rules also mark wine as effervescent when it holds more than 0.392 gram of carbon dioxide per 100 milliliters 2. Home-bottling pressure depends on the vessel, closure, temperature, and process; it is not a single table for every wine.

Bottle, tank, and the word Champagne

TTB’s “Champagne” type is sparkling light wine whose bubbles come only from secondary fermentation in glass containers of not more than one gallon, and that tastes like champagne as made in the Champagne district of France 1. That is a U.S. identity rule, not a travelogue and not an AVA recipe. An American appellation on the label still names geography, not a méthode 3.

A sparkling wine that tastes Champagne-like but was not fermented in those small bottles may not drop the class words “sparkling wine.” It may add “Champagne style,” “Champagne type,” or “American (or Napa Valley, etc.) champagne” plus one of: bulk process, fermented outside the bottle, secondary fermentation outside the bottle, secondary fermentation before bottling, not fermented in the bottle, or not bottle fermented. “Charmat method” or “charmat process” may appear as extra information 1. Tank (Charmat) is still class 2: yeast made the CO₂, just not in the bottle you buy.

Crackling, pétillant, and frizzante wines are sparkling light wines that are less gassy than champagne-style wine but still stream bubbles after the first air bubbles vanish 1. If that gentler sparkle came from secondary fermentation in containers larger than one gallon, the words “bulk process” must ride with “crackling wine” in similar type.

When finished sparkling wine is moved from tank to bottle or bottle to bottle, extra CO₂ may be used only as counterpressure. It may not raise the wine’s carbon dioxide by more than 0.009 g per 100 mL 4. That is a transfer allowance, not permission to carbonate a still wine and call it sparkling.

Residual sugar in the dosage (or left in the wine) is sweetness against the acid and the prickle. Yeast that died in the bottle are Lees until they are disgorged; riddling timing depends on the producer’s process. Fruit wine has the same sparkling-versus-carbonated fork; apple wine that lacks a vinous character is Cider, not this grape class 1.

What to notice

Pour: a slow bead from the bottom is dissolved CO₂ leaving solution; a brief soda hiss that dies is closer to carbonation. Smell: yeast-bread and autolysis can come from time on bottle lees; a harsh gas sting is pressure, not “minerality.” Taste with Tasting wine: acid holds the bubbles up; flabby sparkling wine tastes like sweet foam.

Failure: a still wine labeled sparkling is a class error. A tank wine wearing only “Champagne” without the bulk-process language is the labeling problem 4.21 is written to stop. Gushers and bottle bombs are pressure you did not measure — quality and safety, not a style.
