Clarification

Removing haze-forming protein, yeast solids, and other colloids from juice or wine so the liquid looks bright — a cellar finish, not extraction and not the crush.

Clarification is making juice or wine see-through. Cloud is Protein, pectin, yeast, and bits of grape that never dissolved. Gravity drops Lees. Fining adds a material that binds what you want gone. Wine filtration then sieves what still floats. This is not Must (the starting mix) and not Extraction (skins giving color and tannin).
U.S. labeling law treats filtering equipment and fining agents as ordinary cellar treatment when they do not change the class of the wine 1. On bonded premises, materials used to filter, clarify, or purify may take out cloudiness, precipitation, and some off odors — they may not change the wine’s character contrary to good commercial practice 2.
Protein haze is a look, not a taste #
Grape Protein can stay dissolved until alcohol or heat knocks it out as a dull, amorphous cloud. Butzke: you cannot taste that haze; customers still reject the bottle. Heat in a parked car is enough to trigger it. Tannin in many red Vitis vinifera wines denatures those proteins during aging, so whites, rosés, and tannin-light reds are the usual bentonite candidates 3. That denaturation is the same word as Denaturation in milk; the job here is visual stability.
Bentonite (hydrated alumino-silicate, “Wyoming clay”) is authorized to clarify and stabilize juice or wine 2. It adsorbs protein. Purdue’s range for wine protein is about 10 to 300 mg/L, and bentonite additions in that paper run about 60 to 1,800 mg/L — more than an order of magnitude — which is why a routine “two pounds a thousand gallons” under- or overdoses 3. Overfining strips aroma and colloids you wanted. Bench-trial the wine; a house dose is not universal.
Water used to slurry a treating material, alone or with other water-based additions, may not exceed 1 percent of the treated volume 2. Gelatin, isinglass, egg albumen, and casein are other authorized clarifiers; gelatin also binds tannin, so a protein fining on a red is a structure choice, not only a polish 2. Smith and colleagues still own astringency as saliva-protein binding — do not treat a fined wine as tannin-free 4.
What to notice #
Look: juice that was cloudy after Pressing wine drops a compact layer; wine that was dull goes bright against a lamp. Smell: earthy bentonite or a stripped, hollow nose is overdone clay, not “minerality.” Taste: the wine should still have fruit and acid; a thinner mid-palate after a heavy fine is the cost.
Failure: haze that returns after a heat spike is protein you did not remove. A wine that looks stable but smells of nothing is over-clarified. Air mixed in with the slurry oxidizes — a different fault. Juice fined hard with bentonite can ferment sluggishly because growth factors left with the solids 3.
