    Name the cost of overmixing

    Add the tradeoff that more mixing can raise dough temperature and change the dough's later fermentation behavior, even when strength initially improves.

    The page could compare a dough before and after a rest so readers see that development can continue through hydration and time, not only active mixing.

    Strength includes extensibility

    A useful dough can stretch while holding together and can support the next handling step. A tight, tearing mass is not automatically more developed.
