Recipes and baker’s-percentage formulas that apply the encyclopedia rather than replacing it.

Formulas here are teaching tools and attributed tested processes. They point back at techniques, ingredients, and safety pages.

Country loaf (teaching formula) is a house teaching bread. Strawberry jam (powdered pectin) is a public tested jam from the National Center for Home Food Preservation, not a Gourmet Gastronomer invention.
