Quince

A hard, high-pectin pome that, if not overripe, Ohio State treats as able to gel with sugar alone — and a Group II fruit in U.S. jam identity.

Quince is a hard pome you rarely eat raw. Ohio State places quinces in Group I: if not overripe, enough natural pectin and acid to gel with added sugar only 1. That is why quince jelly is a classic set. Hard fruits such as apples may need 20–25 minutes to soften for juice; excess boiling destroys pectin, flavor, and color 1. Jam identity. 21 CFR 150.160 lists quince in Group II 2. Kitchen pectin class and labeling ratio are different tables.

What to notice. Perfume when cooked, astringency when raw, a paste that sheets. Do not invent a water-bath time. Jam if you keep the pulp in the pot.
