Pineapple

A tropical fruit listed in Group I of U.S. jam identity, with a special combination rule that pineapple may be as little as one-tenth of a mixed fruit weight.

Pineapple is a composite fruit: many flowers fused, a fibrous core, juice that tastes like acid and sugar at once. Ohio’s three-column pectin chart does not include pineapple, so its preserve behavior needs separate evidence.
Jam identity. 21 CFR 150.160 lists pineapple in Group I. In mixed-fruit combinations, pineapple may be not less than one-tenth of the fruit weight, a looser floor than the one-fifth required of the other fruits in those combinations 1. That is a labeling arithmetic, not a kitchen pectin promise. See Jam.
Pineapple is an acid fruit for canning purposes in NCHFP’s acid-versus-low-acid split — fruits sit with jams and pickles on the pH 4.6 side — but that does not mint a process time 2. Canning and Acidity are the line. Strawberry is a teaching jam fruit; this one is the tropical mixer.
What to notice. Smell at the base; give in the eyes. A pale, squeaky pineapple will not concentrate into a bright jam. Do not invent a water-bath time.
