Orange is citrus: juice, pulp, and peel with different jobs. Sweet eating oranges are not automatically marmalade oranges.
Jam identity. 21 CFR 150.160 lists orange among Group I fruits for standardized preserves and jams 1. That is a labeling ratio, not a flavor guarantee.
Gel. Ohio State places oranges in the group that is low in natural acid or pectin and might need addition of either 2. Lemon sits on the “enough pectin and acid” side of the same chart. Do not assume an orange behaves like a lemon in the kettle.
Marmalade. Ohio State: marmalades are soft jellies with pieces of fruit or peel, and they often contain citrus 2. Peel is pectin, bitterness, and oil. Details: Marmalade and Pectin. Kitchen jam without peel is Jam.
What to notice. Smell the zest, not only the juice. Thick pith means more bitterness if you keep it. A dry, hollow orange is storage, not a gel strategy.
Sugar still has to be in proportion if you are making a conventional pectin gel. Juice brands and fresh fruit are different purchasing contexts.
