Cream is Milk with the fat concentrated. Left to stand, fat globules rise; a separator does the same job faster. Carton labels describe how that fraction was processed.
U.S. butter identity starts here: Butter is made exclusively from milk or cream or both 1. Churning gathers fat into a plastic mass; what you began with was cream (or milk rich enough to behave like it).
Cheese. FAO’s small-scale notes treat cream as the high-fat stream you mix back with skimmed milk when you standardize cheese milk — fat as an emulsion that should be a chosen composition, not leftover luck 2. The craft of the vat is Cheese; coagulation determines the curd.
Cooking. Cream is fat plus water plus milk solids. Heat it and it reduces; ferment it and you are in dairy Fermentation — Yogurt is one such food, from milk rather than from this fraction alone. Whipping is air in fat, not a cheese make.
Taste cream as dairy sweetness and fat, not as “richness” in the abstract. Then notice whether a sauce sheens or splits, and whether a cheese milk was lean or generous — cream is the lever, not a garnish.
