Most sourdough problems are not mysteries. They are mismatches among Sourdough starter ripeness, Bulk fermentation, dough strength, and the bake.

A dense crumb often means underfermentation or weak Gluten. A loaf that spreads may have been shaped without tension or proofed too far. Harsh acidity can mean a starter kept too warm, too hungry, or both. None of these diagnoses replace looking at the dough 1.
