Levain

A jar of ripe sourdough starter, with a band at the height from the last feeding.

A preferment built from starter, flour, and water for a particular dough, mixed and fermented on a schedule.

Levain is starter given a job. You take some Sourdough starter, add Wheat flour and water, and ferment that mixture until it is ripe for the dough you intend to mix.

The point is control: inoculation, acidity, and gas production can be aimed at a bake time rather than at whatever state the storage starter happens to be in. That control is part of professional breadmaking as Calvel describes it 1.

Ripe levain then enters Mixing and continues its work in Bulk fermentation.
