Call altitude before anyone lights the burner
The page is careful that a gel is not a canned jar, and that NCHFP’s strawberry formula is a tested process. I still see home canners read “jam” and skip elevation. A short pointer to canning altitude — and to the strawberry formula’s own time bands, not a generic extra minute — belongs near the canning section, before anyone treats a sea-level time as portable. Do not invent minutes here.
